Capway Systems BV, Capway Pan BV and Stalam SpA are proud to introduce to world markets a new baking concept: fully automated baking lines based on the dielectric heating technology by electromagnetic waves (radio frequency or microwave) for the production of crustless, white-crust and par-baked bread.
Capway Systems is a world-renowned supplier of automation, product handling systems and ancillary equipment for the food industry and more specifically for industrial bakeries.
Capway Pan is an innovative designer and supplier of baking forms and teflon coatings specialising in deep-drawn pans, large size sheets and now also plastic pan-straps and lids.
Stalam is a world leader in the design and manufacture of radio frequency, microwave and infrared equipment for various drying and heating processes on raw materials, intermediate and finished industrial products.
Capway and Stalam have agreed to join forces by entering into a mutually exclusive technical and commercial co-operation for the supply of turnkey, fully integrated and automated production lines based on radio frequency (RF) and microwave (MW) technologies for the baking of bread and other dough products (patent IT 1341124, patent pending 2002434).
The first RF baking line, which has an output of approximately 2,500 bread loaves per hour, has already been successfully commissioned. Both companies look forward to introducing this concept on a worldwide scale starting from IBA 2009.
Capway Systems will be at the forefront of marketing these highly innovative baking lines and will, in co-operation with STALAM, put at potential buyers’ disposal a fully equipped testing facility for process demonstrations and new products development with both RF and MW semi-industrial ovens.
